Spinach, Artichoke & Ricotta Lasagna Roll Ups


I absolutely LOVE lasagna! Like, really, really LOVE it. However, I’m just a little bored with the classic version. This super simple recipe tastes the same, and looks a bit fancier. It’s also already portioned out for you, which I love. Our entire family enjoys this meal, and it looks fancy enough to serve for company!

Here’s the recipe:

12 lasagna noodles

2cups ricotta. I use part skim.

Tbsp olive oil

3 cups spinach

1 can artichoke hearts, chopped

1 cup Parmesan cheese

1 cup Mozzarella cheese

Marinara sauce

Salt & pepper to taste

Preheat oven to 350°. Cook the noodles until they’re almost done; about 10 minutes. While the noodles cook, sautee spinach in a bit of olive oil. Mix the ricotta, spinach,  artichokes, cheeses, and a bit of salt and pepper to taste in a bowl. (I like to use garlic salt in mine!) Once noodles are finished cooking, cool under cold water and then spoon ricotta mix on to the noodle. Add a little marinara sauce to bottom of dish, roll the noodles up loosely, and place in dish. Pour sauce over tops of noodles, sprinkle more cheese and bake for 30 minutes.


Serve with a big garden salad, bread and wine!
